St. Patrick's Day Cupcakes

Read this blog post with an Irish accent, and it will be all the better!

How can you go wrong with an Irish themed cupcake?  The base was a Brown Sugar Pound Cake, that was a bit deceiving.  The batter was not that impressive, and we forgot to read the fine print that stated the recipe makes 28 cupcakes, and we overfilled, so hence forth no picture of the cupcakes coming out of the oven!  But then, once they cooled, the two sticks of butter and 2 1/4 cups of brown sugar, caramelized into cupcake heaven, oh how delightful!

The frosting, on the other hand, was the crowning jewel for this holiday themed spectacular!  A Baileys Irish Cream frosting!  We had to make it in two batches, one with the Baileys, and one without, using a non-alcoholic Irish Cream substitute.  Three sticks of butter and a pound of sugar later, we have one fantastic, and oh so delightful creation!  Two green thumbs up for this one!

Can't wait to try the Brown Sugar Pound cake, with a brown butter frosting, I can hardly imagine what that will taste like!

We are taking next week off, for Spring Break, but we will be back in April for more creations.  As always, if one ends up in your hands, take a bite, and blog us in the morning!!

  1. Every Irish-themed recipe I've seen this year features alcohol. Maybe it's too hard to get excited about potatoes. Super cute photo of Adeline!
