Chocolate Chip Cupcakes


I am a little behind on updating this blog, sorry!

These cupcakes were by far one of my favorite, a classic white cake, with a Dark Chocolate Frosting!!  I seriously ate probably 4 or 5, that first day!  The cupcake uses cake flour and whipped egg whites to give it this amazing light and airy texture, then you add chocolate chips!!  It doesn't get much better than that, but oh wait, it does, the frosting!!!

The frosting is a Dark Chocolate satiny gift from the heavens!!  It combines Dutch-processed cocoa along with 1 1/2 pounds (that's right) of best quality semi sweet chocolate, to make something that is so extraordinary, it makes me cry just thinking about it right now!!  So good, too good, must make more!!

So there you have it, a truly tasty treat!!

Streusel Cupcakes

  This cupcake did not live up to its expectations, we already have it planned as a re-do :(  The cupcake itself was delish, but the streusel topping lacked the crumble we were looking for, it was a bit dry.  We would add more butter to make it crumblier, and double the batch of sugar/milk glaze for on top!

Marble Cupcakes

This was the twins pick for their afterschool birthday treat!  Aiden isn't a big frosting fan, so this was perfect for him. 

This cupcake is the classic marriage of chocolate and vanilla!  Simple and Sweet!  The swirling was the hardest part about these little babies.  They were a big hit with the birthday boys!!  We sprinkled a little powdered sugar on top, for an added bonus!

Gingerbread Cupcakes


So this is the cupcake of all cupcakes!!  We made the first batch true to the Martha Stewart recipe and it was delish, and then we made seven more, for a total of 170 cupcakes!!

We changed the recipe a little, and made our own Nutmeg Buttercream frosting, which I must say was so delightful, this cupcake just screamed Christmas!  We made them for teacher and neighbor gifts, and then we got orders, yes orders for five dozen cupcakes!  I can't wait until next year, when we can bust this little baby out again, I think this is going to be a new tradition, and certainly a holiday favorite!!

Candied Sweet Potato Cupcakes


Oh my, these little gems were absolutely amazing!  I am a huge fan of Sweet Potatoes, so my expectations were pretty high, and they did not disapoint. 

We started by baking three large sweet potatoes until the juices began to seep, and carmalize.  While that cooled, we made the Candied Pecans to put on top!  Once done we mixed all the other ingredients together and bake until our little cupcake perfections came out.  The frosting isn't really a frosting, more like a mound of mini marshmallows you place on a sheet and broil until browned.  After they are done you carefully scrap them up and place on top of the cupcake, quickly followed by a few of the pecan pieces.

The end result is so delightful, if you are a fan of Sweet Potatoes, and really who isn't?  Then make these, seriously right now, and don't be afraid to serve them as a side for Thanksgiving, they are that good!

Maple Cupcakes

Yesterday we finally got back in our groove, and made cupcakes again.  Our schedules have been crazy and we have been missing out on our cupcake cure! 

With the cost of pure maple syrup so outrageous we were hoping these would be amazing, and they were.  The cupcake was moist, and flavorful and the frosting was a maple version of a classic buttercream, the end result was a perfect combination.  We thought these would be extra delightful with some crispy bacon on top, so this morning, we fried some up and ate these for breakfast, they were AMAZING!!!!!!  Cupcakes with bacon, a new favorite!

Pumpkin Patch Cupcakes

We were so excited to try some of the fun fall flavored cupcakes in the book, and this was first on our list!  Nothing screams cool weather like some pumpkin cupcakes.  These had a great blend of spices which made for a really fantastic flavor combination.  The frosting was the basic cream-cheese, but I think these would also pair well with the fluffy vanilla, one of my favorite!

We sadly forgot to take any pictures, so I pirated the one off of Martha Stewarts website.  We didn't make the marzipan pumpkins, we used a sugard pumpkin candy from Harry & David.
